Lemon drops, lemon juice, lemon bars, lemonade, and lemon meringue are the only lemon combinations I knew of when I was younger. But then I heard of limoncello. What could be better than lemons and a liquid sweet liqueur? Not much.

Limoncello is a liqueur that is made from lemon rinds, sugar and grain alcohol. This is key. I once made Limoncello with waxed lemons, vodka, and sugar thinking that it would produce the same product. I was sadly mistaken and out a 40 oz. bottle of Grey Goose and a dozen lemons... Needless to say I am a fast learner.

The grain alcohol reacts with the lemon rind and it is important that it is a pure alcohol so all the oils from the lemon can be absorbed by the alcohol. The mixture then needs to sit out and ferment. Limoncello is originated in Southern Italy. Different regions of lemons create a variety of flavors. And the time left for fermentation can vary.

Don't underestimate the potency of something just because it is lemon, and be prepared to make limoncello a nightcap as it will knock you out! I prefer limoncello to replace the normal dessert as it also serves as a digestive.
